Garlic Prawns

Ingredients

  • 500g fresh peeled prawns
  • 6 chopped cloves of garlic
  • Zest 1 lemon
  • 1 lemon juice
  • Olive oil
  • 2 chopped chilies
  • ½ cup chopped parsley
  • Salt, Pepper

Method

  • Combine the parsley, garlic and chilies and put aside
  • Add the lemon juice, zest, oil, salt and pepper to the prawns and mix well
  • Marinate for about ½ and hour in the fridge
  • Sauté the garlic parsley and chilies in a frying pan with a little oil for about 3 minutes
  • Then add the prawns and cook for another 3 minutes until they turn pink
  • Serve hot with rice and green salad

Special Spiced Rice

Ingredients

  • 2 cups rice
  • 500g mince beef / lamb
  • 3 cloves garlic crushed
  • 5 cups chicken stock
  • Salt, pepper, mixed spiced, pinch of nutmeg, cardamon
  • Blanched almonds   to garnish
  • Olive oil

Method

  • Cook the onion over a medium heat for 5 minutes then add the garlic and stir for 1 minute
  • Add the mince and cook until browned, breaking up any lumps with the back of the spoon then add all the spices and stir well for about 10 minutes
  • Wash and drain the rice
  • Place rice in a pot covered in water and mix about 2 tablespoon olive oil stir well.
  • Mix the rice with the meat
  • Add the stock to the mixture bring to boil then reduce the heat to as low as possible
  • Cook for – 25 minutes
  • Fry the almonds and stir over medium heat for about 5 minutes until golden brown
  • Serve garnished with yogurt salad

Bread with Za’atar and olives

Ingredients

  • 2 Cups plain flour
  • 2 tablespoon dried yeast
  • ½ teaspoon sugar
  • ½ teaspoon salt
  • 2 tablespoon olive oil
  • ¾ Cup warm water
  • Hand full of fresh za’tar leaves/chopped olives
  • Olive oil

Method

  • Combine flour, yeast, sugar, salt, za’atar, olives and olive oil then add water.
  • Mix together to make the dough
  • Bring it together with your hands.
  • Knead on a floured surface until it smooth and elastic.
  • Cover with a damp T-towel and set aside for about 1 hour or until it doubles in size.
  • Knead and divide into 8 portions.
  • Roll each portion into a circle.
  • Brush with olive oil then set aside for 10 minutes.
  • Bake in pre heat oven 180 for 8 minutes.
  • This recipe makes 8

Rice and Lentils (Mujaddara)

Ingredients

  • 2 cups rice
  • 1 cup brown lentils
  • 4 onions sliced
  • Salt, pepper
  • 3 cups water
  • Oil

Method

  • Wash lentils then put them in a pot and cover with enough water.
  • Boil for about ½ an hour
  • In a pan pour about 2 tbs olive oil and stir the washed rice for about 10 minutes
  • Strain the lentils and reserve the water
  • Mix the rice and lentils then add the seasoning
  • Pour 3 cups of water and use the reserved water first
  • Bring to the boil then simmer for ½ an hour
  • Fry the onions then place them over the rice and lentils
  • Serve with yoghurt

Pizza Muffins

Ingredients

  • 6 English muffins
  • 2 Cups cooked chicken or 1 cup bacon shredded
  • 100g Sliced mushrooms
  • 1 Sliced onion
  • 10 Pitted olives sliced
  • Grated mozzarella cheese
  • Herbs to garnish

Method

  • Slice muffins in half and place them on the oven tray
  • Spread the sauce on the muffins.
  • Top with meat, mushrooms, onions, olives and cheese.
  • Sprinkle the pizza herbs
  • Cook in the oven for 15 minutes or until the cheese is melted or lightly browned.

Stuffed potatoes and potato patties

Ingredients

  • 8 large potatoes
  • 400g meat of your choice mince /diced lamb/ diced beef
  • 1 onion diced
  • 2 cloves garlic crushed
  • 1 carrot diced
  • ½ cup peas
  • Salt, pepper, seasoning
  • 2 tbsp Worcestershire sauce
  • 3 cups beef stock
  • Olive oil
  • Shredded cheese

Method

  • Bake the potato with the skin in 180 degree for about one hour or until tender
  • Scoop the potatoes and leave about 1 cm from the potato
  • In a hot oily pan fry the onion and garlic for 3 to 5 minutes
  • Add the meat and carrots then stir for 10 minutes
  • Add the salt, pepper, seasoning and the sauce then mix well
  • Add the beef stock and bring to the boil then simmer for 45 minutes or until the meat becomes tender
  • Add peas and cook for 15 minutes
  • Sprinkle salt and pepper then fill the potatoes with the mixture.
  • Top them with cheese then put them back in the oven for about 15 minutes or until golden brown and crispy
  • With the left over potato you can create another dish
  • Combine the mash potato with some chopped parsley, ham, 1 egg, 2 spoons of flour, ½ spoon cumin, chilli and seasoning
  • Mix well and make the patties
  • Place the patties in hot oiled pan and fry them on each side until golden brown

Cheeseburgers

Ingredients

  • 800g lean beef mince
  • 8 burger buns
  • 1 brown onion, finely diced
  • ½ cup chopped fresh parsley
  • 1 egg
  • Salt, pepper and oregano for seasoning
  • 1 tbsp barbecue sauce
  • Olive oil
  • Tomato
  • Lettuce
  • Cheese slices
  • Beetroot sliced
  • Ketchup and Dijon mustard

Method

  • Combine the mince, onion, parsley, seasoning, barbecue sauce and egg then mix well
  • Make burger patties
  • Place the patties in hot lightly oiled pan or grill
  • Cook for 4 to 5 minutes on each side
  • Lightly toast the burger buns
  • Serve warm with a side of chips
  • This recipe makes 8 burgers

Chicken soup with Risoni/ noodles

Ingredients

  • 1 whole chicken
  • 1 carrot
  • 1 stalk celery
  • 1 onion / 1 leek optional
  • 3 cloves of garlic
  • 2 bay leaves
  • 4 parsley/ 4 thyme springs
  • 3 cloves
  • 3 cardamom pods
  • Salt, pepper
  • 2 cubes of chicken stock
  • 2 tbsp oil
  • 1 cup Risoni/ noodles
  • Lemon juice optional

Method

  • Trim and wash the chicken, rub it with salt and lemon juice then wash it again
  • Place it in a pot and cover with water
  • Cut all the vegetables into thick slices
  • Put all the vegetables and the seasoning and bring to boil for 20 minutes then reduce the heat, simmer for about 1 hour
  • Regularly skimming scum from the surface.
  • Strain the soup into another pot
  • Cut meat into cubes and put it in the soup
  • In a pan heat the oil and brown the risoni/ noodles then add it to the mixture, bring to boil for 12-15 minutes
  • Pour it in a bowl and add a few drops of lemon juice

Tip

  • Chicken can be eaten separate as a side dish as is or lightly fry or grill

Easy homemade pizza

Ingredients for two large pizzas

  • 2 cups plain flour
  • 2 tbsp of dry yeast
  • 1 tsp sugar
  • ½ tsp salt
  • ¼ cup olive oil
  • ¾ cup warm water

Method

  • Combine flour, yeast, sugar and salt
  • Mix thoroughly then add the oil and water to form the dough
  • Kneed on a floured surface until soft
  • Use a flour shaker to get the best dough
  • Place it in a bowl then cover it with a wet clean T towel for about 2 hours or until it rises to double the size
  • When it has risen, kneed the dough again for about a minute then divided into two
  • Roll the dough out to desired size then top it with pizza sauce
  • Add a thin layer of shredded cheese, chopped red/green capsicum, chilli, onions, mushrooms, salami and olives.
  • Top it with plenty of cheese sprinkle some Italian herb
  • Bake it for 30 minutes or until golden brown

Liver with garlic and oregano

Ingredients

  • 500g liver lamb or chicken
  • Zest 1 lemon
  • Lemon juice of 1 lemon
  • Salt, pepper
  • 1 fresh chilli
  • 1 tsp dried oregano
  • Olive oil
  • Chopped parsley

Method

  • Trim the liver and cut into slices.
  • Mix liver, lemon zest, lemon juice, salt, pepper, dried oregano and 2 tablespoons of olive oil.
  • Pour 2 tbsp of olive oil into frying pan.
  • Fry the chopped chilli and garlic for 2 minutes or until soft and then add the liver mixture.
  • Mix well and stir from time to time on a medium heat for about 6 minutes or until golden brown.
  • Serve hot and garnish with chopped parsley and baby rockets.
  • Side dish of fries or wedges.
